El Gordo Burrito

6 oz. clarified butter
24 large eggs, slightly beaten
12 - 12" flour tortillas, kept warm
3 cups Queso fresco cheese, crumbled
2 lbs. Howlin' Coyote Barbacoa Braised Beef Filling
4 cups cooked black beans, kept warm
2 cups Howlin' Coyote Three Chili Sauce
1/2 cups cilantro, chopped

Directions

Cook and scramble eggs (in batches of 6-8 eggs each) in melted butter over low heat until eggs are firm and fully cooked. Keep cooked eggs warm. To serve: Layer each tortilla with 2/3 cup cooked eggs, 1/4 cup Queso fresco cheese, 1/4 cup Howlin' Coyote barbacoa beef filling, 1/3 cup black beans, 1/3 cup Howlin' Coyote three chili sauce, and 1 Tbsp. chopped cilantro. Roll up burrito-style, serve immediately.
